A proper Irish coffee for St. Patrick's Day

According to Irish entertainer and local Jupiter resident, Brendan Grace, there's a secret to making the perfect Irish coffee." You have to use real whipped cream, not that shaving cream stuff,"
said Grace as he prepared an authentic Irish coffee using the original recipe. "You also must use good Irish whiskey."
The start of this fine drink goes back to the early 1940's. At the time, flying boats from the United States used the wide waterway of the Shannon Estuary to land at Foynes, County Limerick, where today the GPA Foynes Flying Boat Museum recalls that era with the aid of old radio equipment, video and visuals.
"The airport was located in Shannon," said Grace. "The chef at this time was a lad named Joe Sheridan. He felt these cold weary travelers needed a warm and welcoming drink. He wanted it to be Irish in character, but also appeal to the sophisticated world traveler. It took a couple experiments over a number of years, Joe finally came up with the delightful drink now known as Irish coffee. And, till this day it is the official welcoming beverage at Shannon Airport."
Shannon Airport became a stepping stone between Europe and North America. Movie stars, Presidents, and politicians all passed through Shannon and sampled Joe Sheridan's Irish coffee.
Early enthusiasts were Irish film actress Maureen O'Hara, and international stars Bing Crosby and Fred Astaire. "Maureen O'Hara is still actively involved with the Foynes Museum," said Grace. "She married Captain Charlie Blair, who made the first non-stop passenger flight from Foynes to New York in 25 hours, 40 minutes."
The era of the flying boats was colorful but brief and in 1945, hundreds of people watched as Capt. Blair piloted the last American Export flying boat out of Foynes to New York.

IRISH COFFEE (SHANNON AIRPORT ORIGINAL RECIPE)

INGREDIENTS: PREPARATION
Cream - rich as an Irish brogue *Heat a stemmed whiskey goblet
Coffee - strong as a friendly hand * Pour in one jigger of whiskey
Sugar - sweet as the tongue of a rogue * Add three cubes of sugar (to taste)
Whiskey - smooth as the wit of the land * Stir to dissolve sugar
*Top off with whipped cream slightly aerated so that it floats.
*Do not stir after adding cream, as the true flavour is obtained by drinking the hot coffee and Irish whiskey through the cream .
