The Glycemic Index Does Matter
Contributed by: Dr. Bruce Hansbrough   on 9/12/2006

Recently, I spoke about how the inches coming off my waist with very little effort as a result of changing and substituting certain foods, rearranging when I eat, and taking supplements. There is a lot of old information being tossed around that basically debunks the "glycemic index." Don't fall into that belief.

When the glycemic index concept was first released in 1981, most dieticians, nutritionists, and physicians were shocked by the results. The glycemic index, for those of you who do not know, is defined as the rate blood sugar would actually rise following the ingestion of a particular test food relative to the ingestion of a standard food (either white bread or glucose). As many health and wellness experts know, processed carbohydrates (like white bread, pasta, etc.) typically have higher glycemic indices (except for white potatos) relative to unprocessed carbohydrates (like whole fruit, vegetables, and grains). This literally shot the concept that the rise in blood sugar could be determined solely on whether a carbohydrate was a simple sugar or a complex carbohydrate in the foot. Obviously, the majority of health care professionals still do not accept this new concept with open arms.

Studies done in Australia, Canada, United Kingdom, and across Europe have now proven beyond any doubt there is tremendous value in the glycemic index. However, the United States, particularly AMA affiliated groups, remain opposed to this new concept and continue to recommend teaching the concept of simple sugar and complex carbohydrates to everyone including our diabetics.

What really determines our body's ability to absorb a particular food? In a nutshell, it is how a particular carbohydrate has been processed and prepared. Since 90% of the carbohydrates we now consume in the United States and many other parts of the world are processed carbohydrates, we need to begin to understand why obesity, heart disease, high blood pressure, elevated lipids, and diabetes are epidemic in the western world today.

Once you learn how to eliminate and replace processed foods, especially carbohydrates, you begin to gradually get your body's chemistry back into balance. High quality nutritional supplements are essential in restoring the damage done by years of highly processed carbohydrate consumption.

I know much of this is may not be eay to understand. However, if you educate yourself on why the U.S. and Canada have the highest incidence of cardiovascular disease and diabetes in the world, it is a cinch to make the connection with the North American lifestyle, particularly the diet. Our food industry plays a significant role in marketing these unhealthy choices to consumers and should be held accountable for the end results.

Hey, I am eager to hear from some of you out there. Email your comments to bhansbro@bellsouth net and put in your two cents worth.
