FLOURLESS CHOCOLATE CAKE
6 ounces bittersweet chocolate (not unsweetened)
1 stick unsalted butter
3/4 cup sugar
3 large eggs
1 teaspoon vanilla
Accompaniment if desired: homemade whipped cream
Preheat oven to 375 degrees and line the bottom of a springform pan with parchment paper.
Melt the chocolate on a very,very low heat in a pan with the butter stirring occasionally until smooth. Mix in the sugar. Separate the eggs and whisk the whites until stiff. Add the yolks to the chocolate mixture. Gently fold in a third of the egg whites, then add the rest of the whites, folding gently until the mixture is a uniform light brown. Add vanilla. Pour batter into the springform pan. Bake in the middle of the oven for 25 minutes. The cake will rise while cooking and then will collapse when cooling. Do not worry. It will taste grand. Cool the cake on a wire rack before releasing it from the springform pan. Serve with a generous dollop of whipped cream, just the way Nanny Crawford did for Charles and Anne. Camilla says this is one of her favorite ways to please Charles after a long day of fly fishing.
