Charles's Favorite Welsh Rarebit
Serves 2
1 1/2 cups grated Cheddar cheese
2 tablespoons beer
Worcestershire sauce to taste
Pinch of ground mustard
1 egg yolk, lightly beaten
3 tablespoons bread crumbs
2 slices fresh bread (dare we suggest Pepperidge Farms?)
Paprika - for decoration
Melt cheese and beer in saucepan over low heat, stirring often. Add Worcestershire sauce and mustard. Stir. Remove from heat and beat in egg yolk. Add bread crumbs. Stir. Preheat broiler. Toast bread lightly. Spread bread with rarebit topping. Sprinkle with paprika. Cook under broiler until golden and bubbling. Nanny Crawford would cut off Anne's bread crusts, but Charles manfully ate his. Camilla loves this treat after a long day of hacking, but please remember that C&C prefer Black Velvets with their Welsh Rarebits these days. No more warm milk!

: 4 ounces Guinness Stout poured into a tall glass - then add 4 ounces Champage. Delish!
