SAUSAGE BREAKFAST SQUARES
Serves 8

1 pound sausage
1/2 cup chopped onion
1/4 cup Parmesan cheese
1/4 cup Swiss cheese
2 eggs (1 beaten for glazing)
1 1/2 teaspoon salt
2 cups biscuit mix (we like Bisquick)
1/4 cup mayonnaise
1/2 teaspoon hot sauce
2 tablespoons chopped fresh parsley (although dry will do)
2/3 cup milk

Brown sausage and onion. Drain. In a bowl combine sausage mixture, cheeses, 1 egg and the seasonings. Make dough with the biscuit mix, milk and the mayonnaise. Divide dough in half. Press half of the dough into a greased 8-inch square pan. Cover with sausage mixture. Pat remaining dough on top to cover. Brush with beaten egg. Bake at 400 degrees F for 30 minutes. Cut into squares and serve warm. You can prepare the night before and bake in the morning. Perfect for those fuzzy New Year's Daymornings. Charles and Camilla rave.

"Only dull people are brilliant at breakfast."
Oscar Wilde

I'm sold. No more skipping breakfast for me with this easy recipe to follow. Just reading this makes me hungry. Another winner from Ms. Sanders.
