I have had a rotten cold this week - as have many of my co-workers. This is what we needed to make us feel human again-
MAMA'S CHICKEN SOUP
Serves 4, make buckets of it - it is a long cold & flu season!
3 pounds chicken wings
1 carrot, peeled and halved
1 medium onion, sliced and diced
1 cinnamon stick
1 3-inch knob of peeled ginger
Zest and juice of 1 orange (you are in Florida, after all)
1 small red chili pepper, seeded and cut into rings for garnish
In a large sauce pan combine chicken, carrot, onion, cinnamon, ginger and salt. Add 3 quarts of water, orange zest and juice. Place pan over a high heat and bring to a boil, then reduce heat to low. Simmer, uncovered, until the liquid has reduced by about half and the chicken flavor smells strong - about 1 1/2 hours to 2 hours. Charles is much better at sniffing out this moment of cooking triumph. He says it has nothing to do with the size of his nose - rawther that Camilla still smokes too much. Not that she listens! When that little flap dies down, pour the liquid through a fine strainer into a bowl and discard the solids. Allow the broth to cool, and then refrigerate over night. When ready to serve, warm the soup and ladle it into mugs or bowls. I always throw in a handfull of cooked rice. Here's to your improving health!
