Sewall's Point Cooks Sundays 9
Contributed by: Jean Sanders on 6/29/2006

Uncooked Tomato Sauce
Serves 4

2 pounds tomatoes, very ripe, chopped and seeded
1 small onion, chopped
2 cloves garlic, crushed
1/2 cup fresh basil
1/2 cup extra virgin olive oil
Sea salt and black pepper to taste
1 pound spaghetti
1/2 cup Parmesan cheese, freshly grated

Mix the tomatoes in a bowl with onion, garlic, basil, oil and salt and pepper. Cover the bowl with plastic wrap and let sit for a couple of hours. Today Charles wants to sit and read the paper, but Camilla is itching to take a walk on the empty beach. It is so hard to make decisions on rainy Sundays in Florida! Well, in a couple of hours cook the pasta. Drain. Toss the pasta with the tomato mixture and serve immediately with the Parmesan cheese, garlic bread, a green salad and a good red wine with candlelight.

"Sunday morning may be cheery enough, with its extra cup of coffee and litter of Sunday newspapers, but there is always hanging over it the ominous threat of 3 P.M., when the sun gets around to the back windows and life stops dead in its tracks."
Robert Benchley
