Uncooked Tomato Sauce
Serves 4
2 pounds tomatoes, very ripe, chopped and seeded
1 small onion, chopped
2 cloves garlic, crushed
1/2 cup fresh basil
1/2 cup extra virgin olive oil
Sea salt and black pepper to taste
1 pound spaghetti
1/2 cup Parmesan cheese, freshly grated
Mix the tomatoes in a bowl with onion, garlic, basil, oil and salt and pepper. Cover the bowl with plastic wrap and let sit for a couple of hours. Today Charles wants to sit and read the paper, but Camilla is itching to take a walk on the empty beach. It is so hard to make decisions on rainy Sundays in Florida! Well, in a couple of hours cook the pasta. Drain. Toss the pasta with the tomato mixture and serve immediately with the Parmesan cheese, garlic bread, a green salad and a good red wine with candlelight.
