Grilled Sausages with Homemade Catsup
Serves 12!

3 pounds good quality hot Italian sausages
3 pounds ditto qulaity sweet sausages
Homemade tomato catsup
12-16 crusty French bread rolls

Homemade Catsup:
3 medium onions, chopped
4 garlic cloves, crushed
4 28-ounce cans whole tomatoes, drained
1/2 cup sugar
1 cup cider vinegar
1 teaspoon whole cloves
1 teaspoon crushed allspice
1 cinnamon stick
1 teaspoon celery seed
2 teaspoons dried mustard
1 teaspoon paprika
Tabasco sauce - to taste
Pinch of salt
1 cheesecloth bag

In a heavy pot cook the onions, garlic and tomatoes over a low heat. Cover the pot, stir occasionally, until the onions are very soft - about 40 minutes. Put the mixture in a food processor (or blender) and puree. In that big pot stir together the puree, sugar and vinegar. Simmer, uncovered, until the mixture is reduced - about 20 minutes. Tie the cloves, allspice, cinnamon and celery seed in the cheesecloth bag and add to the tomato mixture with the mustard and paprika. Simmer the mixture - about 10 minutes - until it is very thick. Discard the seasoning bag. Add the Tabasco and salt. You can make this days in advance. Don't try to make this AND grilled sausages. Charles and Camilla will have nibbled up all the Twiglets and then will get testy and grouchy. Not a good situation when you are trying to get that Royal Warrant.
Grill the fresh sausages on an oiled rack set 5 to 6 inches over glowing coals, turning them for about 10 - 15 minutes, until crispy on the outside and heated through. Serve the sausages with catsup and grood brown mustard on crusty rolls. No one will believe you made the catsup, except C&C, who will be too busy eating to tell everyone how talented you are.
