Sunday Quiche
Serves 8
1 pre-baked 9-inch shell (go ahead and cheat - buy one)
6 slices bacon, cooked & crumbled
1 tablespoon extra virgin olive oil
2 teaspoons brown sugar
1 small Vidalia onion, chopped
1 clove garlic, crushed
1 medium tomato, seeded and diced
1 tablespoon white wine
1/2 teaspoon
herbes de Provence
1/4 teaspoon paprika
5 large, fresh eggs
1 cup half and half
Salt and pepper to taste
4 or 5 drops hot sauce
1 cup grated Jarlsburg cheese
Preheat the oven to 400 degrees F. Saute the onion and garlic in the olive oil for 2 to 3 minutes. Add the tomato, white wine,
herbes de Provence
and paprika and saute for a few minutes. Remove from the heat and set aside. Now reset the oven temperature to 325 degrees. In a big bowl whisk together the eggs, half and half, sugar, salt, pepper and hot sauce. Put the sauteed veggies into the pie shell. Crumble the bacon into the pie shell. Sprinkle the cheese over the bacon. Now pour the egg mixture over everything. Garnish with a few dashes of paprika.
Bake on the lower shelf of the oven for 40 to 45 minutes until the egg mixture is set. Normally this is when Camilla sneaks out for a smoke, but she and Charles are on tour on the Subcontinent. Instead, you can grab the

and enjoy the comfy wicker chair out back in the delighful sunshine. Let the quiche cool for about 15 minutes before serving. Serve with wine, Champagne or even the good old reliable Bloody Mary. Cheers!
