Pasta Caprese
Serves 4
1 1/2 pound tomatoes, seeded and chopped
8 ounces fresh mozzarella cheese, cut into small chunks
3 tablespoons extra virgin olive oil
2 teaspoons red wine vinegar
1/2 cup chopped fresh basil
1 clove of garlic, pressed (of course!)
12 ounces penne pasta
This is a variation on last week's tomato,basil & mozzarella meal. The twist is that this week Camilla is preparing it while Charles reads the paper. Charles is enjoying Father's Day.
Mix tomatoes, oil and vinegar and garlic in a bowl. Season with salt and pepper. Cover with Saran Wrap and let it stand at room temp for an hour or so. It depends on the Crossword.
Cook the pasta, drain it and add it to the tomato mixture. Add the basil. Camilla almost forgot to pick some from the windowbox. Top with the tasty chunks of mozzarella. Toss to blend. Camilla has even made garlic bread. Charles is happy to pour the cabernet.
