MACARONI & CHEESE - BAHAMIAN STYLE

8 oz. elbow macaroni, cooked, rinsed and drained
1 medium onion, chopped
1 cup grated sharp Cheddar Cheese
1 can evaporated milk
2 large eggs, beaten
Salt & Pepper to taste

Boil the macaroni until tender. Add the chopped onions to water to soften. Drain well. Add half of the cheese and stir over low heat until melted. Stir in the evaporated milk and eggs. Add salt and pepper to taste. Put into a well greased casserole dish. Sprinkle with remaining cheese evenly over the top. Bake at 350 degrees for about 20 minutes or until mixture has set. Remove from oven and let stand for ten minutes. Cut into squares and serve.
